Yuzu is a citrus fruit resulting from the crossing of a wild mandarin and a lemon. It is native to East Asia (probably China) and widely cultivated in Japan. It looks like a small grapefruit (its diameter is about 6 cm) dented. The zest of this round lemon is irregular, but easy to detach and particularly fragrant. Its flesh, scarce, is also scarce.
